Method

Pork Preparation

    Marinate the Pork

    In a blender, combine the pork shoulder, diced pineapple, onion, garlic, chipotle peppers, oregano, cumin, salt, pepper, and lime juice. Blend until smooth to create a marinade.

    Refrigerate

    Place the pork in a large resealable bag or a bowl and pour the marinade over it. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sear until cooked through and slightly charred, about 5-7 minutes per side.

    Rest and Slice

    Once cooked, allow the pork to rest for 10 minutes before slicing it into thin strips.

Pineapple Salsa Preparation

    Mix Salsa Ingredients

    In a medium bowl, combine the diced pineapple, red onion, cilantro, jalapeño, lime juice, and salt. Mix well to combine.

    Adjust Seasoning

    Taste and adjust seasoning with more salt or lime juice as needed.

Chipotle Aioli Preparation

    Combine Aioli Ingredients

    In a small bowl, mix together the mayonnaise, chipotle pepper, lime juice, minced garlic, and salt until smooth.

    Adjust Aioli Seasoning

    Taste and adjust seasoning with additional salt or lime juice if desired.

Assembly

    Warm Tortillas

    Warm the corn tortillas on a skillet for about 30 seconds on each side until pliable.

    Assemble Tacos

    Assemble the tacos by placing sliced pork on each tortilla, and topping with pineapple salsa and a drizzle of chipotle aioli.
