Method

Cooking Sushi Rice

    Rinse the Rice

    Place the sushi rice in a bowl and rinse it under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice using a wooden spatula. Allow the rice to cool to room temperature.

Preparing Salad Ingredients

    Prepare Cucumber

    Slice the cucumber thinly into rounds or half-moons, depending on your preference.

    Prepare Edamame

    If using frozen edamame, cook according to package instructions and then drain.

    Prepare Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut into slices.

Making Poke Sauce

    Combine Ingredients

    In a small bowl, whisk together the soy sauce, sesame oil, sriracha, and honey until well combined.

Poaching Shrimp

    Prepare Poaching Liquid

    In a large pot, bring 4 cups of water, lemon juice, and salt to a simmer.

    Poach the Shrimp

    Add the shrimp to the simmering water and cook for 2-3 minutes, or until they turn pink and opaque. Remove from the pot and let them cool.

Assembling the Dish

    Plate the Ingredients

    On a serving plate or bowl, start with a base of sushi rice. Top with sliced cucumber, edamame, avocado, and poached shrimp.

    Drizzle with Poke Sauce

    Drizzle the poke sauce over the top of the assembled ingredients and sprinkle sesame seeds for garnish.

    Serve
