In a small bowl, mix the warm milk and active dry yeast. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Butter
While the dough is rising, place the cold unsalted butter between two sheets of parchment paper and pound it with a rolling pin until it’s about 1 cm thick. Shape it into a rectangle and refrigerate.

Roll Out the Dough
Once the dough has risen, turn it out onto a floured surface and roll it into a rectangle about 1 cm thick.

Roll the dough out again into a rectangle and then fold it into thirds. Wrap in plastic wrap and refrigerate for 30 minutes.

Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.
Shaping and Baking

After the final fold, roll the dough out into a large rectangle, about 1 cm thick.

Cut and Shape Croissants
Cut the dough into triangles. Starting from the wide end, roll each triangle tightly to form a croissant shape.

Place the shaped croissants on a baking sheet lined with parchment paper, cover them, and let them rise for about 1 hour until puffed.

Preheat your oven to 200°C (400°F) during the last 20 minutes of the second rise.
