To Make the Pineapple Syrup

    Prepare the Pineapple

    In a blender, combine the diced fresh pineapple and blend until smooth.

    Cook the Syrup

    In a medium saucepan, combine the blended pineapple, sugar, and water. Bring to a boil over medium heat, stirring occasionally, until the sugar has dissolved.

    Reduce heat and let the mixture simmer for about 10 minutes, allowing the flavors to meld and the syrup to thicken slightly.

    Strain the Syrup

    Remove from heat and let cool. Once cooled, strain the syrup through a fine mesh sieve into a clean jar to remove the pulp. Discard the pulp.

    Store the pineapple syrup in the refrigerator until ready to use. It can be kept for up to a week.
