Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the seasoning mixture. Allow the rice to cool to room temperature.

Prepare the Filling

    Slice the Scallions

    Chop the scallions into thin slices, using both the green and white parts.

    Soften the Cream Cheese

    Let the cream cheese sit at room temperature for about 15 minutes to soften it for easier spreading.

Assemble the Philly Roll

    Lay Out the Nori

    Place a bamboo sushi mat on a flat surface. Lay one sheet of nori, shiny side down, on the mat.

    Add Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Spread Cream Cheese

    Spread a thin layer of softened cream cheese in the center of the rice.

    Add Smoked Salmon and Scallions

    Place slices of smoked salmon on top of the cream cheese. Then sprinkle the chopped scallions over the salmon.

    Roll the Sushi

    Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to keep the filling inside. Roll until you reach the bare edge of the nori, then wet it to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Serve

    Plate the Sushi

    Arrange the sliced sushi rolls on a plate and serve with soy sauce, pickled ginger, and wasabi on the side.
