Croissant Dough Preparation

    In a small bowl, warm the milk to about 110°F (43°C). Sprinkle the yeast and sugar over the milk and let it sit for 5-10 minutes until frothy.

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and eggs. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover it, and let it rise for 1 hour or until doubled in size.

    After the dough has risen, roll it out into a rectangle. Spread softened butter over two-thirds of the dough. Fold the unbuttered third over the buttered portion, then fold the remaining third over that. Roll out again into a rectangle and repeat this process two more times, chilling the dough in the fridge between folds.

    After the final fold, wrap the dough in plastic and refrigerate for at least 1 hour or overnight for best results.

Filling Preparation

    Sauté Mushrooms

    In a skillet, heat olive oil over medium heat. Add the chopped mushrooms, garlic, salt, and black pepper. Sauté until the mushrooms are softened and any liquid has evaporated, about 8-10 minutes.

    Remove the skillet from heat and stir in the goat cheese and fresh thyme until well combined. Allow the mixture to cool slightly.
