Crust Preparation

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until well combined.

    Form the Crust

    Press the crumb mixture firmly into the bottom of a 12-cup muffin tin, making sure it is even. Bake in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the granulated sugar, mixing well until fully incorporated.

    Add the vanilla extract and sour cream to the cream cheese mixture. Beat until well combined. Then, add the eggs one at a time, beating well after each addition until smooth and creamy.

Assembly and Baking

    Fill the Crusts

    Spoon the cheesecake filling evenly into each of the prepared crusts, filling them about 3/4 full.

    Bake the Cheesecakes

    Bake in the oven for 18-20 minutes, or until the centers are set but still slightly jiggly. Turn off the oven and let the cheesecakes cool in the oven for about 1 hour.

    After cooling, place the mini cheesecakes in the refrigerator for at least 2 hours to fully set. Optionally, top with fresh berries and a dusting of powdered sugar before serving.
