Pasta

Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring salted water to a boil over high heat.

  2. 2

    Cook the Linguine

Add the linguine pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain the Pasta

Once cooked, reserve 1 cup of pasta water and drain the rest. Set the linguine aside.

Making the Sauce

  1. 4

    Heat the Olive Oil

In a large skillet, heat the olive oil over medium heat.

  2. 5

    Sauté Garlic

Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

  3. 6

    Add Red Pepper Flakes

Stir in the crushed red pepper flakes and cook for an additional minute.

  4. 7

    Pour White Wine

Slowly add the dry white wine to the skillet and let it simmer for about 3-4 minutes, allowing the alcohol to cook off.

  5. 8

    Add Clams

If using fresh clams, add them to the skillet and cover to steam for about 5-7 minutes until they open up. If using canned clams, add them directly to the sauce.

  6. 9

    Mix in Pasta and Parsley

Add the cooked linguine and chopped parsley to the skillet. Toss everything together, adding reserved pasta water a little at a time if the sauce is too thick.

  7. 10

    Finish the Dish

Season with cracked black pepper and drizzle with fresh lemon juice before serving.
