Method

Preparation of Proteins

    Cook Chicken

    Season the chicken breast with salt, black pepper, garlic powder, and onion powder. Grill or pan-cook over medium heat for 6-7 minutes on each side until fully cooked. Let it rest for a few minutes, then slice into strips.

    Cook Pork

    Cut the pork shoulder into chunks and season with the same spices. Slow cook or pressure cook until tender (about 4-6 hours on low in a slow cooker). Shred the pork with two forks.

    Prepare Ground Beef

    In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Season with salt, black pepper, garlic powder, and onion powder. Cook for about 8-10 minutes until fully browned.

Cooking Grains and Legumes

    Cook Rice

    Rinse the rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

    Heat Beans

    If using canned black beans, drain and rinse them. Heat in a saucepan over medium heat until warmed through, about 5 minutes.

Prepare Ponzu Aioli

    Make Sauce

    In a small bowl, mix ponzu sauce and mayonnaise until well combined. Adjust seasoning to taste.

Assembly

    Assemble the Bowl or Burrito

    In a large bowl or tortilla, layer the cooked rice, black beans, choice of proteins (chicken, pork, or beef), and top with shredded cheese if using. Drizzle with ponzu aioli and add any additional toppings like jalapeños, cilantro, or tomatoes as desired.
