Sushi Rice

Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let it sit for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Allow the rice to cool to room temperature.

Prepare Tuna Filling

    Chop the Tuna

    Dice the fresh sushi-grade tuna into small cubes.

    Make Spice Mayo

    In a bowl, combine the mayonnaise and Sriracha sauce. Adjust the spiciness to your preference.

    Mix Tuna with Mayo

    Add the chopped tuna to the spice mayo and mix until well combined. Stir in tempura flakes gently.

Assemble the Rolls

    Lay Nori on Bamboo Mat

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Sushi Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Tuna Filling

    Spoon the tuna filling along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Begin rolling the mat away from you, applying light pressure to keep the roll tight. Roll until you reach the exposed edge of the nori. Use a little water to seal the edge.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Top with Tuna and Avocado

    Thinly slice the additional fresh tuna and avocado. Arrange them beautifully on top of each sushi piece.

    Serve

    Serve with soy sauce and wasabi on the side.
