Prepare Sushi Rice

Cook the rice
Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions, typically using a rice cooker or a pot with a 1:1.2 rice-to-water ratio.

Season the rice
In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Once rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool.

Make spicy tuna mix
In a bowl, combine diced raw tuna with mayonnaise, sriracha, and a pinch of salt to taste. Mix well and set aside.
Assemble Sushi Rolls

Lay down the nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread sushi rice
Wet your fingers and grab a handful of sushi rice. Evenly spread it over the nori, leaving about 1 inch at the top edge.

Add fillings
Place your chosen fillings (shrimp, cream cheese, spicy tuna mix, avocado, cucumber, or mango) in a line across the rice.

Roll it up
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until the edge of the nori seals to the rice.

Slice the roll
Use a sharp knife to slice the sushi roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for cleaner slices.
Serve

Plate the sushi
Arrange the sushi rolls on a platter and sprinkle with sesame seeds. Serve with soy sauce, wasabi, and pickled ginger on the side.
