Prepare Chicken

    Marinate Chicken

    In a bowl, mix together harissa paste, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook Chicken

    Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Prepare Salad Base

    Chop Salad Ingredients

    While the chicken is cooking, chop the romaine lettuce into bite-sized pieces and place in a large salad bowl. Halve the cherry tomatoes and add to the bowl. If using corn, add it to the salad base.

    Add Avocado and Eggs

    Slice the avocado and hard-boiled eggs. Arrange them over the salad base along with the pickled red onions and crumbled goat cheese (if using).

Prepare Dressing

    Mix Dressing Ingredients

    In a small bowl, whisk together olive oil, lemon juice, harissa paste, honey, salt, and pepper until well-combined. Adjust seasoning to taste.

Assemble and Serve

    Combine Salad and Dressing

    Once the chicken is cooked and sliced, add it on top of the salad base. Drizzle the harissa dressing over the salad and toss gently to combine.
