Marinating the Chicken

    In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper to create the marinade.

    Add the chicken breasts to the marinade, ensuring they are completely coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling the Chicken

    Preheat your grill or grill pan over medium-high heat.

    Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Assembling the Pita

    While the chicken is resting, prepare your pita bread. Warm the pita in the grill or microwave for a few seconds until soft.

    Spread a generous tablespoon of hummus inside each pita.

    Layer in the sliced grilled chicken, diced tomato, diced cucumber, sliced red onion, and a few spoonfuls of tzatziki sauce.

    Top with pickled onions and any additional toppings you desire.

    Fold the pita in half and serve immediately while warm.
