Marinated Grilled Chicken

    Prepare the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, paprika, and cumin.

    Marinate the Chicken

    Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes or up to 4 hours.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Hummus

    Blend the Ingredients

    In a food processor, combine chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, water, and ground cumin.

    Process Until Smooth

    Blend until the mixture is smooth and creamy. You can add more water if needed to achieve your desired consistency.

    Serve

    Transfer the hummus to a bowl and drizzle with olive oil before serving.

Vegetable Salad

    Combine the Vegetables

    In a mixing bowl, combine the diced tomato, cucumber, and sliced red onion.

    Add salt and pepper to taste, tossing gently to combine.

Tzatziki Sauce

    Mix Ingredients

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt.

    Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Pickled Onions

    Prepare the Pickling Liquid

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve.

    Pickle the Onions

    Place the sliced red onion in a jar and pour the hot pickling liquid over the onions. Let them sit for at least 30 minutes before serving.
