Method

Preparation

  1. 1

    Prepare the Asparagus

Trim the ends of the asparagus and blanch them in boiling water for 2-3 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop cooking.

  2. 2

    Slice the Avocado and Cucumber

Cut the avocados in half, remove the pit, and scoop out the flesh. Slice the avocado into thin strips. For the cucumber, cut it in half lengthwise, remove the seeds with a spoon, and then slice it into thin strips.

Assembly

  1. 3

    Assemble the Wraps

Lay a sheet of soy paper on a clean, dry surface. Starting from the bottom, layer the avocado slices, cucumber strips, and blanched asparagus. Sprinkle with salt and drizzle with lemon juice.

  2. 4

    Roll the Wrap

Carefully roll the soy paper over the fillings, tucking in the sides as you go to create a neat wrap. Ensure all the fillings are securely rolled inside.

  3. 5

    Slice and Serve

Once the rolls are complete, use a sharp knife to slice them into bite-sized pieces. Arrange on a plate and serve immediately.
