Bowl Preparation

Prepare the Lentils

If not pre-cooked, rinse 1 cup of lentils under cold water and simmer in a pot with 2 cups of water for about 20-25 minutes or until tender. Drain and set aside.

Prepare the Vegetables

Dice the tomato and cucumber into small pieces. Rinse the fresh spinach and set aside.

Prepare the Chickpeas

If using canned chickpeas, drain and rinse them under cold water. If using dried chickpeas, soak them overnight and cook until tender.

Cook the Falafel

Fry or bake the falafel according to package instructions until golden brown and crispy.

Combine Ingredients

In a large bowl, layer the cooked lentils, spinach, diced tomato, diced cucumber, chickpeas, corn, and falafel pieces.

Add Toppings

Top the bowl with hummus, pumpkin seeds, and crispy pita chips for added texture.

Mix Dressing Ingredients

In a small bowl, combine olive oil, zatar spice mix, lemon juice, salt, and black pepper. Whisk until well combined.

Drizzle and Serve

Drizzle the zatar dressing over the assembled bowl just before serving.
