Dumpling Dough Preparation

Mix the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add hot water while stirring with a fork until the mixture forms a dough.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
Chop the shrimp into small pieces. In a bowl, combine the chopped shrimp, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well.

Roll the Dough
After resting, divide the dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches wide).

Fill the Dumplings
Place a small spoonful of shrimp filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. Make sure there's enough oil to cover the bottom of the skillet.

Fry the Dumplings
Place the dumplings carefully into the hot oil (do not overcrowd). Fry for about 2-3 minutes on each side or until golden brown and crispy.
