Focaccia Bread

Method

Focaccia Bread Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Allow it to sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the activated yeast mixture and olive oil. Stir until a sticky dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

    Shape and Second Rise

    Preheat the oven to 425°F (220°C). Punch down the dough and transfer it to a greased baking sheet. Press it out to fit the pan, creating dimples with your fingers. Cover and let it rise for another 20-30 minutes.

    Add Toppings

    Drizzle the dough with olive oil, sprinkle with fresh rosemary and coarse sea salt.

    Bake

    Bake the focaccia in the preheated oven for about 20-25 minutes, or until golden brown.

    Remove from the oven and let cool on a wire rack before slicing.

Herb Oil Preparation

    Combine Ingredients

    In a small bowl, whisk together the extra virgin olive oil, fresh basil, fresh parsley, and minced garlic.

    Infuse

    Let the herb oil sit for at least 15 minutes to allow the flavors to meld.

Giardiniera Preparation

    Mix Giardiniera

    In a bowl, combine the mixed pickled vegetables, olive oil, and red wine vinegar. Stir well to combine.

    Set Aside

    Let the giardiniera sit for at least 10 minutes before serving to enhance the flavors.
