Method

Prepare Sushi Rice

    Wash the Rice

    Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a separate small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine while cooling the rice.

Prepare Escolar Filling

    Slice the Escolar

    Cut the escolar fish into thin slices, about 1/4 inch thick. Set aside.

    Prepare Soy Sauce Mixture

    In a small bowl, mix soy sauce and wasabi. This will be used as a dipping sauce.

Assemble Sushi

    Lay out Nori

    Place one nori sheet on a bamboo sushi mat or a clean, flat surface, shiny side facing down.

    Spread Sushi Rice

    Wet your hands to prevent sticking and take about 1/2 cup of sushi rice. Spread it evenly over the nori, leaving about 1 inch of space at the top edge.

    Add Escolar Filling

    Place 2-3 slices of escolar fish horizontally across the center of the rice.

    Roll the Sushi

    Using the mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until you reach the exposed edge of the nori, then wet it to seal the roll.

    Slice and Garnish

    Using a sharp knife, slice the roll into bite-sized pieces. Sprinkle sesame seeds on top and garnish with chopped chives or green onions.
