Preparation of Fish

    Prepare the Fresh Tuna

    Start by finely dicing the fresh tuna into small cubes. Place the diced tuna in a bowl and set aside.

    Sprinkle the Cajun seasoning evenly over the escolar fillet. Ensure it is well-coated for maximum flavor.

Cooking the Escolar

    Heat a non-stick skillet over medium-high heat. Once hot, add the seasoned escolar fillet and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove from heat and let it rest for a minute before slicing.
