Dough Preparation

    Activate Yeast

    In a bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes foamy.

    Make the Dough

    In a large mixing bowl, whisk together all-purpose flour, salt, and sugar. Add the yeast mixture, softened butter, and milk. Mix until a dough forms.

    Knead the Dough

    Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, until doubled in size.

    Prepare Butter Block

    While the dough is rising, take the cold unsalted butter and place it between two sheets of parchment paper. Using a rolling pin, pound the butter into a rectangle about 1/2 inch thick. Refrigerate until ready to use.

Rolling and Shaping

    Incorporate Butter

    Once the dough has risen, roll it out on a floured surface into a rectangle that is about 1 inch thick. Place the chilled butter block in the center and fold the dough over it to encase the butter completely.

    Roll the dough out again into a long rectangle. Fold it into thirds (like a letter) and refrigerate for 30 minutes. Repeat this rolling and folding process 3 more times to create layers.

Filling and Baking

    After the final fold, roll the dough out one last time into a rectangle. Cut the dough into triangles. Place a tablespoon of chocolate chips at the wide end of each triangle and roll it up tightly.

    In a small bowl, whisk together the egg and milk. Brush the tops of the croissants with the egg wash.

    Place the croissants on a baking sheet lined with parchment paper and let them rise for another 30 minutes. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes or until golden brown.
