Potato Chips Preparation

    Slice the Potatoes

    Wash the potatoes thoroughly and slice them thinly using a mandoline or a sharp knife. Aim for about 1/8 inch thickness for even cooking.

    Soak the Slices

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier chips.

    Dry the Slices

    After soaking, drain the water and lay the potato slices on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

    Heat the Oil

    In a deep frying pan or a heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices into the hot oil. Fry until they are golden brown and crispy, about 3-4 minutes. Avoid overcrowding the pan.

    Use a slotted spoon to remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, and garlic powder.
