Method

Cooking the Chicken

  1. 1

    Prepare the Chicken

In a bowl, combine the olive oil, minced garlic, cumin, paprika, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade and coat them evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

  3. 3

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).

  4. 4

    Shred the Chicken

Once cooked, remove the chicken from the heat and let it rest for a few minutes. Then shred the chicken using two forks.

Assembling the Torta

  1. 5

    Prepare the Bread

Slice the bolillo rolls in half horizontally. Lightly toast them if desired.

  2. 6

    Add the Chicken

On the bottom half of each roll, place a generous portion of the shredded chicken.

  3. 7

    Layer the Vegetables

Top the chicken with sliced avocado, tomatoes, and shredded lettuce.

  4. 8

    Add Condiments

Spread a layer of sour cream on the top half of the rolls and add pickled jalapeños to taste.

  5. 9

    Complete the Torta

Close the torta by placing the top half of the roll on the assembled ingredients.

Serving

  1. 10

    Garnish and Serve

Cut the tortas in half if desired. Garnish with fresh cilantro and serve with lime wedges on the side.
