Chicken Preparation

Flatten the Chicken
Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to flatten them to about 1/2 inch thick.

Season the Chicken
Season both sides of the flattened chicken breasts with salt and black pepper.
Breading

Prepare the Breading Station
In a shallow bowl, beat the egg. In another shallow bowl, mix gluten-free breadcrumbs with grated Parmesan cheese.

Bread the Chicken
Dip each seasoned chicken breast in the beaten egg, allowing excess to drip off. Then coat both sides in the breadcrumb mixture, pressing lightly to adhere.
Cooking and Assembly

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate.

Assemble the Chicken Parm
Preheat your oven to 375°F (190°C). In a baking dish, place the fried chicken breasts and spoon the heirloom tomato sauce over each piece. Top with shredded mozzarella cheese.

Bake in the preheated oven for about 15-20 minutes or until the cheese is melted and bubbly.

Add Finishing Touches
Remove from the oven and dollop fresh ricotta cheese on top of each chicken piece. Drizzle with basil pesto and garnish with fresh basil leaves before serving.
