    Slice the Ribeye

    Thinly slice the ribeye steak against the grain into strips and set aside.

    Chop the Vegetables

    Finely chop the yellow onion, green bell pepper, and mushrooms, and set aside.

Cooking

    Cook the Vegetables

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion, green pepper, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes.

    Add the Steak

    Push the cooked vegetables to one side of the skillet and add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye steak. Season with salt and black pepper. Cook for about 3-4 minutes until the steak is browned and cooked through.

    Melt the Cheese

    Lay the slices of provolone cheese over the steak and vegetable mixture. Cover the skillet with a lid and let the cheese melt for about 2 minutes.

    While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through, creating a pocket for the filling.
