Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

    Form the Crust

    Press the crumb mixture into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8 minutes, then remove and let cool.

Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and sour cream, mixing until well incorporated.

    Incorporate Vanilla and Eggs

    Add the vanilla extract, then add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

    Gently fold in the all-purpose flour using a spatula until just combined.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust, spreading it evenly.

Baking

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

    Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour. Then, remove from the oven and let cool at room temperature for another hour before refrigerating for at least 4 hours, preferably overnight.

    If desired, mix fresh berries with powdered sugar in a small bowl and let sit for 10 minutes to release juices.
