Preparing the Potatoes

    Begin by washing the Russet potatoes thoroughly under cold water. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, uniform rounds (about 1/8 inch thick).

    Soak the Slices

    Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

Frying the Chips

    Heat the Oil

    In a large, deep skillet or a frying pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a kitchen thermometer.

    Dry the Potatoes

    After soaking, drain the potato slices and pat them dry with paper towels. Ensuring they are dry prevents the oil from splattering during frying.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, being sure not to overcrowd the pan. Fry for about 3-5 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil.
