Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a rice cooker, combine the rinsed sushi rice and water. Cook according to rice cooker instructions. If you do not have a rice cooker, you can cook it in a pot on the stove by bringing it to a boil, then reducing to a simmer for 20 minutes.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow to cool.

Prepare Sushi Filling

    Prepare Vegetables

    Slice the cucumber and avocado into thin strips.

    Prepare Crab Sticks

    Chop the crab sticks into small pieces.

    Prepare Shrimp

    If using whole shrimp, chop it into small pieces.

Make Spicy Mayo

    Combine Ingredients

    In a small bowl, mix mayonnaise, Sriracha sauce, lemon juice, and garlic powder until well combined.

Assemble Sushi Rolls

    Lay Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Rice

    With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Layer the sliced cucumber, avocado, chopped crab sticks, and shrimp along the bottom edge of the rice-covered nori.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, tucking in the fillings as you go. Roll tightly but not too tight to avoid squeezing out the fillings.

    Seal the Roll

    Moisten the top edge of the nori with water to seal the roll.

Bake and Garnish

    Bake Rolls

    Preheat your oven to 350°F (175°C). Place the assembled rolls on a baking sheet and bake for about 10 minutes, until heated through.

    Add Spicy Mayo

    Drizzle spicy mayo over the baked rolls and sprinkle with sesame seeds and chopped green onions.

Serve

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Serve with additional spicy mayo on the side.
