Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix together rice vinegar, sugar, and salt. Heat the mixture slightly until the sugar and salt dissolve, then pour it over the rice. Gently fold the rice to combine, being careful not to mash it. Allow the rice to cool to room temperature.

Prepare Cajun Tuna Filling

    Prepare Tuna

    Chop the sushi-grade white tuna into small, bite-sized pieces. In a mixing bowl, combine the tuna, Cajun seasoning, mayonnaise, and chopped chives. Mix well until the tuna is evenly coated with the seasoning and mayonnaise.

Assemble Sushi

    Prepare Nori

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down.

    Spread Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Evenly spread the rice over the nori, leaving about 1 inch of space at the top edge.

    Add Filling

    Place a line of the Cajun tuna filling across the center of the rice-covered nori.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Roll until you reach the edge of the nori, then dab a little water on the edge to seal the roll.

    With a sharp knife, slice the sushi roll into 2 equal pieces. Sprinkle sesame seeds on top if desired. Serve with soy sauce on the side.
