Braised Chicken

    Sear the Chicken

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper. Add the chicken to the pot and sear until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.

    Sauté Aromatics

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Braise the Chicken

    Return the chicken to the pot. Add the chicken broth, smoked paprika, and bay leaves. Bring to a simmer, then reduce the heat to low. Cover and let it braise for about 40-45 minutes, or until the chicken is tender and cooked through.

    Finish and Shred

    Once the chicken is cooked, remove it from the pot and let it cool slightly. Shred the chicken using two forks and set aside.

Jalapeno Green Goddess

    Prepare the Dressing

    In a blender or food processor, combine the chopped cilantro, chopped jalapeno, Greek yogurt, lemon juice, minced garlic, and salt to taste. Blend until smooth and creamy. Adjust seasoning if necessary.

Pico De Gallo

    Mix the Salsa

    In a medium bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt to taste. Mix well and let sit for at least 10 minutes to allow the flavors to meld.

Assembly

    Serve the Dish

    On a serving platter, place the shredded chicken and drizzle with the jalapeno green goddess dressing. Top with pico de gallo and sprinkle shredded cheddar cheese on top. Serve immediately.
