Prepare the Chiles
Remove the stems and seeds from the guajillo and ancho chiles. Rinse them under water and soak them in hot water for about 15 minutes until soft.

Braise the Beef
Place the beef chuck roast in the pot, pour the blended mixture over the beef, add the bay leaves, and the remaining beef broth. Bring to a simmer, cover, and let it cook on low heat for about 3 hours or until the meat is tender and easily shreds.

Warm the Tortillas
In a skillet over medium heat, warm the tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos
Place a generous amount of the shredded beef onto each tortilla, top with shredded Monterey Jack cheese, and sprinkle with chopped cilantro.

Serve with Birria Sauce
Serve the tacos with a side of the birria sauce for dipping and add lime wedges for extra flavor.
