Method

Beef Barbacoa Preparation

    Prepare the Beef

    In a slow cooker, add the beef chuck roast, onion (roughly chopped), garlic cloves (minced), chipotle peppers, cumin, oregano, salt, black pepper, beef broth, and lime juice.

    Cook the Beef

    Cover the slow cooker and cook on low for 8 hours or until the beef is tender and easily shreds with a fork.

    Shred the Beef

    Once cooked, shred the beef using two forks and mix it back into the juices in the slow cooker.

Fajita Veggies Preparation

    Sauté the Veggies

    In a skillet over medium heat, add olive oil. Once hot, add sliced bell peppers and onion along with salt. Sauté for about 5-7 minutes until softened and lightly browned. Remove from heat.

Corn Salsa Preparation

    Mix the Salsa

    In a bowl, combine corn, diced tomato, finely chopped red onion, cilantro, lime juice, and salt. Mix well and set aside.

Bowl/Burrito Assembly

    Assemble the Bowl or Burrito

    In a bowl or large tortilla, layer cooked rice, shredded beef barbacoa, sautéed fajita veggies, corn salsa, shredded lettuce, shredded cheese, and sour cream. Serve immediately.
