Method
Making the Donuts

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a donut pan.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt until evenly combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Fill the Donut Pan
Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

Bake the Donuts
Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted comes out clean.

Cool the Donuts
Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Cinnamon Sugar Coating

Prepare Cinnamon Sugar
In a shallow bowl, mix together the granulated sugar and ground cinnamon.

Vanilla Cold Foam

Make the Cold Foam
In a medium bowl, whisk together the heavy cream, vanilla extract, and powdered sugar until soft peaks form.
Assembly

Prepare the Drink
In a 16oz cup, add the caramel syrup and brown sugar syrup. If using, add matcha powder or espresso shot.

Add Apple Cider
Pour in the apple cider until the cup is about 3/4 full.

Top with Cold Foam
Spoon the vanilla cold foam on top of the drink and garnish with a sprinkle of cinnamon if desired.
