Method

Preparing the Fried Shrimp

    Prepare the Batter

    In a bowl, mix together all-purpose flour, cornstarch, baking powder, and salt. Gradually add water until the mixture is smooth and slightly thick.

    Heat the Oil

    In a deep frying pan, heat the oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Shrimp

    Dip each shrimp into the batter, allowing excess to drip off. Fry in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Making the Spicy Mayo

    Combine Ingredients

    In a small bowl, mix together mayonnaise, sriracha, and lime juice until well combined.

Assembling the Roll

    Prepare the Sushi Rice

    Cook the sushi rice according to package instructions. Allow to cool slightly.

    Prepare the Nori

    Lay a nori sheet on a bamboo sushi mat, shiny side down.

    Add Rice

    Wet your hands and take a handful of sushi rice. Spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Lay fried shrimp, sliced avocado, and crab sticks in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat and roll the sushi away from you, tucking it tightly as you go. Wet the top edge of the nori to seal the roll.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Drizzle with eel sauce and serve with spicy mayo on the side.
