Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour and salt.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture. Add the yeast mixture, melted butter, and egg. Mix until a dough forms.

  4. 4

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area until doubled in size (about 1 hour).

Almond Filling Preparation

  1. 5

    Prepare the Filling

In a mixing bowl, combine the almond paste, powdered sugar, softened butter, almond extract, and egg white. Mix until smooth and well combined.

Croissant Assembly

  1. 6

    Roll Out the Dough

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a large rectangle (about 1/4 inch thick).

  2. 7

    Cut and Fill

Cut the dough into triangles. Place a spoonful of almond filling at the base of each triangle and roll tightly towards the tip.

  3. 8

    Shape the Croissants

Bend the ends of each rolled croissant towards the center to form a crescent shape.

  4. 9

    Second Rise

Place the croissants on a baking sheet lined with parchment paper. Cover and let rise for another 30-45 minutes.

Baking

  1. 10

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 11

    Add Toppings

Brush the tops of the croissants with egg wash (1 beaten egg) and sprinkle with sliced almonds.

  3. 12

    Bake

Bake in the preheated oven for 15-20 minutes, or until golden brown.

  4. 13

    Cool and Dust

Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
