Method

Bread Preparation

  1. 1

    Activate Yeast

In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 10 minutes, until it becomes frothy.

  2. 2

    Mix Dough

Once the yeast is activated, add olive oil, salt, and gradually mix in the flour. Start with 8 cups, and continue adding more flour until the dough begins to pull away from the sides of the bowl.

  3. 3

    Knead Dough

Transfer the dough onto a floured surface and knead for about 10 minutes until it is smooth and elastic. You may need to add a little more flour as you knead.

  4. 4

    First Rise

Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

  5. 5

    Shape Loaves

After the first rise, punch down the dough and divide it into 4 equal portions. Shape each portion into a loaf and place them into greased loaf pans.

  6. 6

    Second Rise

Cover the shaped loaves with a damp cloth and let them rise for another 30-40 minutes until they have doubled in size.

Topping and Baking

  1. 7

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 8

    Prepare Toppings

In a small bowl, mix together sesame seeds, poppy seeds, and garlic powder.

  3. 9

    Add Toppings

Once the loaves have risen, gently brush the tops with a bit of olive oil and sprinkle the seed mixture evenly over each loaf.

  4. 10

    Bake

Place the loaf pans in the preheated oven and bake for 30-35 minutes, or until the tops are golden brown and the loaves sound hollow when tapped.

  5. 11

    Cool

Remove the loaves from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
