Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, or until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Mix well.

Add the activated yeast mixture and olive oil to the flour mixture. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Spread Tomato Sauce
Spread the tomato sauce evenly over the garlic oil in the pizza pan.

Add Cheeses
Layer the Grana Padano cheese first, followed by dollops of ricotta cheese, and then the shredded mozzarella cheese.

Once the dough has risen, punch it down and roll it out to fit the pizza pan. Place the rolled dough over the cheese layer.

Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
