Method

Crust Preparation

  1. 1

    Make the Dough

In a large bowl, mix all-purpose flour and salt. Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. It should be moist but not sticky.

  3. 3

    Chill the Dough

Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

After chilling, roll the dough out on a floured surface to fit an 11-inch pie dish.

  5. 5

    Pre-bake the Crust

Preheat your oven to 375°F (190°C). Place the rolled-out dough into the pie dish and press it against the sides. Prick the bottom with a fork and bake for 15 minutes until lightly golden. Remove from the oven and let cool slightly.

Filling Preparation

  1. 6

    Prepare Tomatoes

While the crust is baking, slice the ripe tomatoes and set them aside to drain excess moisture.

  2. 7

    Mix Filling Ingredients

In a mixing bowl, combine the chopped basil, mozzarella cheese, Parmesan cheese, mayonnaise, garlic powder, black pepper, and salt.

  3. 8

    Assemble the Pie

Layer the sliced tomatoes evenly in the pre-baked crust. Spread the cheese mixture over the tomatoes, ensuring an even distribution.

  4. 9

    Bake the Pie

Bake the pie in the preheated oven for 30-35 minutes, until the top is bubbly and golden.

  5. 10

    Cool and Serve

Remove from the oven and allow the pie to cool for at least 10 minutes before slicing. Serve warm or at room temperature.
