Pizza Dough Preparation

    Activate Yeast

    In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, mix together flour and salt. Create a well in the center, then add the yeast mixture and olive oil.

    Knead the Dough

    Mix until combined and then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Toppings Preparation

    Cook the Sausage

    In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Drain excess fat and crumble into small pieces.

    Prepare Broccoli Rabe

    Blanch the broccoli rabe in boiling water for about 2-3 minutes, then transfer to an ice bath to stop the cooking. Drain and chop into smaller pieces.

    Slice Peppers

    Slice the long hot peppers in half lengthwise, removing seeds if desired for less heat.

Assembling and Baking Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.

    Shape Dough

    Once the dough has risen, punch it down and roll it out on a floured surface to a 12-inch round.

    Add Toppings

    Transfer the rolled dough to a pizza peel or baking sheet. Spread the whiz cheese evenly over the base, then layer with cooked sausage, broccoli rabe, and sliced long hot peppers. Finally, sprinkle mozzarella cheese on top.

    Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes until the crust is golden and the cheese is bubbly.
