Prepare the Beets
Peel and chop the beets into small cubes. Boil or steam the beets until they are tender, around 15-20 minutes. Drain and allow to cool.

Combine Ingredients
In a large bowl, combine the cooled beets with the dressing. Toss well to ensure all beets are coated.

Add the Fizz
Pour in the root beer and soda water, gently mixing to incorporate the fizz without crushing the beets.
