    Harvest and Prepare Grapes

    Begin by harvesting ripe Sauvignon Blanc grapes, ensuring they are free from any rot or disease. Rinse the grapes thoroughly with water to remove any dirt or pesticides.

    Crush the Grapes

    Using a grape crusher or by hand, crush the grapes to release the juice. You can use a clean bucket or fermentation vessel for this process.

    Add Water

    Add 500 ml of water to the crushed grapes in the fermentation vessel, mixing well to combine. This helps to dilute the sugar content and facilitate fermentation.

    Add Sugar and Yeast

    Dissolve the sugar in a small amount of warm water, then add it to the grape mixture. Sprinkle the yeast over the top of the mixture, allowing it to hydrate for a few minutes before stirring it into the grape must.

    Add Sulfites

    Add 1 g of sulfites to the mixture to protect the wine from unwanted bacteria and oxidation. Stir well to ensure even distribution.

    Fermentation Process

    Cover the fermentation vessel with a clean cloth or airlock to allow gases to escape while preventing contamination. Let the mixture ferment in a cool, dark place for 1-2 weeks, stirring daily.

    Pressing the Wine

    After fermentation is complete, press the mixture to separate the liquid from the solids using a wine press or fine mesh bag. Collect the juice in a clean fermentation vessel.

    Secondary Fermentation

    Transfer the pressed juice to a secondary fermenter, leaving behind any sediment. Allow it to ferment for another 4-6 weeks, monitoring the fermentation process.

    Racking the Wine

    After secondary fermentation, rack (transfer) the wine into a clean container, leaving behind sediment. This helps to clarify the wine.

    Bottling the Wine

    Once the wine has clarified, it’s time to bottle. Carefully siphon the wine into sterilized bottles, leaving some space at the top. Cork the bottles securely.

    Aging the Wine

    Allow the wine to age for at least 3-6 months in a cool, dark place before enjoying. This will enhance the flavors and aromas of the Sauvignon Blanc.
