Ginger Rum Caramel

   Combine Sugar and Water

   In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves.

   Cook Sugar Mixture

   Once the mixture starts to boil, stop stirring and let it boil until it turns a deep amber color.

   Add Heavy Cream

   Remove from heat and carefully stir in heavy cream (it will bubble vigorously).

   Finish Caramel

   Stir in grated ginger and dark rum until fully combined.
