Wine Making Process

    Harvest Grapes

    Select ripe Sauvignon Blanc and Semillon grapes, ensuring that they are free from rot or spoilage.

    Crush Grapes

    Crush the harvested grapes to release the juice. This can be done using a wine press or manually. Collect the juice in a sanitized container.

    Add Water

    Dilute the grape juice with 500 ml of water to adjust the sugar content for fermentation.

    Inoculate with Yeast

    Sprinkle the wine yeast over the juice mixture. Allow it to hydrate for about 15 minutes before stirring it gently into the juice.

    Fermentation

    Cover the container with a clean cloth and let the mixture ferment in a cool, dark place for 2-4 weeks, stirring daily. Monitor the fermentation process for bubbling activity.

    Add Sulfites

    Once fermentation is complete, add 2 grams of sulfites to stabilize the wine and prevent further fermentation.

    After sulfites have been added, siphon the wine into another sanitized container, leaving the sediment behind. This process is known as racking.

    Age the wine in a cool, dark place for at least 6 months. This allows the flavors to develop and mature.
