Prepare the Filling
In a large bowl, combine the shrimp, ground pork, chopped mushrooms, soy sauce, sesame oil, grated ginger, minced garlic, chopped green onions, cornstarch, salt, and pepper. Mix well until all ingredients are evenly combined.

Assemble the Shumai
Place a wonton wrapper on a clean surface. Add about 1 tablespoon of the filling mixture to the center of the wrapper. Gently fold the edges of the wrapper up around the filling, leaving the top exposed. Pinch the edges to seal and shape the shumai as desired. Repeat with the remaining wrappers and filling.

Steam the Shumai
Prepare a steamer by filling the bottom with water and bringing it to a boil. Line the steamer basket with parchment paper or cabbage leaves to prevent sticking. Place the shumai in the steamer basket, ensuring they are not touching. Cover and steam for about 10-12 minutes until the filling is cooked through.

Serve
Once cooked, remove the shumai from the steamer and serve immediately with soy sauce or your favorite dipping sauce.
