Rinse and Cook Lentils

Rinse 2 cups red split lentils under cold running water until the water runs mostly clear to remove dust and excess starch.

Transfer lentils to a medium saucepan. Add 5 cups water and bring to a gentle boil over high heat. Reduce to a simmer, skim any foam from the surface, partially cover and cook until very soft and breaking apart, about 15–20 minutes.

When lentils are tender and starting to lose shape, mash them with a potato masher or use an immersion blender (pulse briefly) to reach a thick, smooth but slightly textured puree. Stir in 1 tsp kosher salt. Keep warm on very low heat while you prepare the sauce.

Homemade Hot Sauce (Berbere-style base)

Sauté Aromatics

Heat 3 tbs neutral oil in a large skillet or heavy-bottomed saucepan over medium heat until shimmering.

Add 1 cup finely chopped onion and cook, stirring frequently, until soft and beginning to brown, about 6–8 minutes. Reduce heat if onions start to burn.

Add 6 cloves minced garlic and 2 tbs minced fresh ginger and sauté 1–2 minutes, until fragrant but not browned.

Build the Hot Sauce

Stir in 2 tbs berbere spice mix and 1 tbs paprika. Cook the spices with the aromatics for 1 minute to bloom the flavors.

Add 2 tbs tomato paste and cook, stirring, for 1–2 minutes until it darkens slightly.

Pour in 1 cup water to loosen the mixture and bring to a gentle simmer. Add 1 tbs white wine vinegar (or lemon juice), 1 tsp brown sugar (or honey), and 1 tsp salt. Simmer 4–6 minutes, stirring occasionally, until the sauce is cohesive and slightly reduced.

Taste and adjust seasoning: more berbere or chili for heat, more sugar for balance, or additional vinegar for brightness.

Combine & Finish

Incorporate Lentils and Sauce

Add the pureed lentils to the skillet with the hot sauce (or transfer the sauce to the pot with the lentils). Stir thoroughly to combine into a smooth, uniformly colored stew. If mixture is too thick, add up to 1/2 cup hot water or vegetable broth to reach a spoonable, slightly saucy consistency.

Simmer together on low for 5–8 minutes to allow flavors to meld, stirring occasionally to prevent sticking. Taste and adjust salt, acidity, or heat as needed.

Finish with Fat and Garnish

Stir in 2 tbs niter kibbeh or unsalted butter until melted and incorporated for richness and authentic flavor. Sprinkle 2 tbs chopped cilantro or parsley and 1 tsp freshly ground black pepper on top. Serve hot with lemon wedges on the side for optional brightness.
