Method
Lentils
Rinse and Cook Lentils
Rinse 1 cup lentils under cold running water until the water runs clear to remove excess starch. Drain well.
Combine lentils and 3 cups water in a medium saucepan. Bring to a boil over medium-high heat.
Skim any foam that rises to the surface, then reduce heat to low, partially cover, and simmer gently for 15–20 minutes (time varies by lentil) until lentils are very soft and breaking apart.
Stir in 1 tsp salt toward the end of cooking. If excess liquid remains, simmer uncovered a few minutes to reduce; if too dry, add a splash of water. Remove from heat.
Puree: For the characteristic smooth, slightly coarse Misir Alitcha texture, mash the cooked lentils with a potato masher or use an immersion blender/pastry blender to puree lightly until smooth but still with some body. Set aside and keep warm.
Turmeric-Garlic-Ginger Sauce (Alitcha)
Add the finely chopped onion and sauté, stirring frequently, until softened and translucent, about 6–8 minutes. Do not brown deeply — a gentle golden color is fine.
Stir in 2 tsp ground turmeric and 1 tsp berbere (if using). Cook the spices for 30–45 seconds to bloom their flavor, stirring continuously so they don’t toast or burn.
Add 1 tsp tomato paste (optional) and cook for 30 seconds, then pour in 1 cup water or vegetable broth, scraping up any browned bits. Bring to a gentle simmer and let the sauce meld for 2–3 minutes.
Season the sauce with 1 tsp salt and 1 tsp freshly ground black pepper. Taste and adjust seasoning.
Finish with 1 tsp lemon juice, stirring to incorporate. If the sauce seems too thin, simmer a minute to reduce; if too thick, add a splash of water.
Reduce heat to low and gently fold the pureed lentils into the turmeric-garlic-ginger sauce until fully combined and heated through, about 2–3 minutes. Adjust consistency with a little warm water if desired: Misir Alitcha should be moist and spoonable, not dry.
To Serve
Transfer Misir Alitcha to a serving bowl. Garnish with chopped cilantro or parsley and a sprinkle of chili flakes or sliced fresh chili, if using.
Serve hot with injera, flatbread, rice, or as part of a vegetarian platter. Leftovers keep in the refrigerator for up to 4 days; reheat gently and add a splash of water if needed.
