Method
Cook the Pasta
- 1
Boil Water
In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt.
- 2
Cook Penne
Add the penne pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.
- 3
Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve about 1 cup of pasta water.
Make the Vodka Sauce
- 4
Heat Oil
In a large skillet over medium heat, add 2 tablespoons of olive oil.
- 5
Sauté Garlic
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- 6
Add Red Pepper Flakes
Stir in the crushed red pepper flakes and sauté for an additional 30 seconds.
- 7
Add Tomato Sauce
Pour in the tomato sauce and stir to combine. Let it simmer for about 5 minutes.
- 8
Incorporate Vodka
Add the vodka to the sauce and let it simmer for another 5 minutes, allowing the alcohol to cook off.
- 9
Add Cream
Stir in the heavy cream, salt, and black pepper. Simmer for an additional 3-4 minutes until the sauce thickens slightly.
Combine and Serve
- 10
Mix Pasta and Sauce
Add the cooked penne pasta to the vodka sauce and toss to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 11
Add Parmesan and Basil
Stir in the grated Parmesan cheese and chopped basil, mixing until well combined.
- 12
Serve
Serve the Penne A La Vodka hot, garnished with additional Parmesan and basil if desired.
