Method
Meatballs
- 1
Prepare the meatball mixture
In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.
- 2
Form the meatballs
Using your hands, form the mixture into small balls, about the size of a golf ball.
- 3
Cook the meatballs
In a large skillet, heat olive oil over medium heat. Add the meatballs and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
Scratch Bread
- 4
Activate the yeast
In a small bowl, mix the yeast, sugar, and warm water. Let it sit for about 5-10 minutes until frothy.
- 5
Make the dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough forms.
- 6
Knead the dough
Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.
- 7
Let it rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- 8
Bake the bread
Preheat your oven to 220°C (425°F). Once risen, punch down the dough, shape it into a loaf, and place it on a baking sheet. Bake for 20-25 minutes or until golden brown.
Whipped Ricotta
- 9
Prepare the ricotta
In a food processor, combine ricotta cheese, olive oil, salt, and black pepper. Blend until smooth and creamy.
Assembling the Dish
- 10
Plate the meatballs
Place the cooked meatballs on a serving plate. Add dollops of whipped ricotta around the meatballs.
- 11
Serve with bread
Slice the scratch bread and serve it alongside the meatballs and ricotta.
- 12
Garnish
Top the dish with fresh basil leaves for added flavor and presentation.
