Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream Butter and Sugars
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract until well combined.

Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Add Chocolate Chips
Fold in the chocolate chips until evenly distributed.

Scoop and Bake
Drop spoonfuls of dough onto ungreased baking sheets and bake for 10-12 minutes or until the edges are golden brown. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Assemble Ice Cream Sandwiches
Once the cookies are completely cooled, take one cookie and place a scoop of vanilla ice cream on the flat side. Drizzle chocolate syrup over the ice cream.

Top with another cookie, flat side down, pressing gently to create a sandwich. Repeat the process for the remaining cookies and ice cream.

Serve immediately or place the assembled ice cream sandwiches in the freezer for about 30 minutes to firm up before serving.
