Dough Preparation

Activate Yeast
In a small bowl, combine warm water, active dry yeast, and sugar. Let it sit for about 5 minutes until frothy.

In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center, and add the yeast mixture and olive oil.

Knead Dough
Mix until combined, then turn out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Mix Filling Ingredients
In a medium bowl, combine ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, black pepper, and Italian seasoning. Mix until well combined.
Assembling and Baking

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape Calzone
Once the dough has risen, punch it down and divide it into two equal pieces. Roll out each piece into a circle about 10 inches in diameter.

Fill Calzone
Place half of the filling on one half of each dough circle, leaving a border around the edge. Fold the other half over the filling and seal the edges by pressing with a fork.

Bake Calzone
Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until golden brown.

Heat the marinara sauce in a small saucepan over medium heat until warmed through. Serve on the side for dipping.
